Your day to day 

We’re looking for an enthusiastic Sous Chef to support our culinary operations.

Reporting directly to the Culinary Director, you will be accountable for coordination and delivery of an exceptional customer service and ensuring adherence food safety compliance.

Your role as a Sous Chef is to assist the Executive Chef in managing his assigned kitchen operation as  a successful independent profit center, ensuring maximum guest satisfaction, through planning, organizing, directing, and controlling the Kitchen operation with a focus on day-to-day operational requirements.

  • Responsible for the efficient and smooth running of food production within the designated Kitchens.
  • To control, check and supervise the kitchen operation and be hands-on as and when needed.
  • To ensure that colleagues are trained in accordance with the hotel and municipality standard requirements.
  • To perform all daily tasks to a consistently high standard in line with both departmental and brand standards

You’ll focus on ensuring our team deliver authentic, memorable experiences for our guests while supporting and developing the team to drive results.

So, what does the day-to-day look like?

Your day to day will be spent

  • working alongside with the culinary and service teams to ensure that operation is in compliance with food safety processors.
  • Coordinate department logistics and overall supporting delivery of consistent customer services, catching moments with your teams and colleagues to have great development conversations aligned to driving accountability to hotel goals and metrics.
  •  Maintain a high-performance standard among both heart of house and guest contact employees to ensure they are knowledgeable, meticulous, perceptive and curious all times.
  • Comply with the hotel’s rules and regulations with regards to HACCP.
  • Ensure compliance to quality and food safety standards and that customer requirements and expectations are met.
  • Supervise the preparation and cooking of various food items
  • Develop and implement creative menu items that adhere to IHG brand standards
  • Wear PPE (Personal Protective Equipment) and ensure same is being respected in all concerned outlets.
  • Facilitate investigation in food hazard cases and follow up in the scope of customer complaint management

 What we need from you

The ideal candidate will have:

  •  Ideally, you’ll have qualification & experience in culinary arts preferably a similar role in delivering high level of food quality in resort/hotel environment and working with food safety systems such as HACCP.
  • Trade Diploma in Food & Beverage / Hotel Management with 5 years’ experience in the pastry, culinary, food and beverage, or related professional area from a Tourism and Hospitality Institute
  • You will have a strong knowledge of current hotel systems and your warm and approachable communication style is what you are most known for.
  • You have developed a keen ability to build and maintain strong relationships along with demonstrated ability to interact with guests, team members and third parties (including contractors) that reflects highly on the Hotel, the brand and IHG.
  • Degree/Diploma in Tourism/Hotel Management, or Culinary related field
  • Strong analytical and problem-solving skills.
  • Great communication skills.
  • Good time management skills; ability to prioritize and coordinate details.
  •  A team player, proactive, responsible, hardworking, and able to work under pressure.
