About Us: Nautilus Resort, located on the stunning South Pacific island of Rarotonga, is a flagship resort for luxury boutique accommodations in the Cook Islands. We boast the award-winning Nautilus Restaurant, offering beachfront dining and a 4.5-star experience. Aqua Bar at Muri Beach Resort, our adjacent venue, provides a cool and casual atmosphere overlooking the Muri lagoon.

About the Role: As the Food and Beverage Manager, you will play a pivotal role in overseeing the day-to-day operations, events, and administrative management of our F&B department. Reporting to the Resort Manager, you will be a key member of the executive team, ensuring the highest standards of service, presentation, and guest experience.

Key Responsibilities:

  • Maintain brand standards of service, presentation, and guest experience
  • Collaborate with the F&B management team to meet KPIs and budget
  • Manage human resources issues and prepare weekly rosters
  • Help develop menus and promotional opportunities
  • Prepare daily and weekly operational reports
  • Ensure compliance with Sale of Liquor License obligations
  • Co-ordinate and conduct training for the F&B team
  • Plan, prepare, and execute various functions and events
  • Oversee inventory management and equipment well-being


  • Minimum 5 years of experience leading a restaurant team, preferably in an upmarket hotel/resort
  • High level of F&B operations, technical skills, and product knowledge
  • Knowledgeable in bar operations, mixology, and sommelier skills
  • Strong leadership, administration, and inventory management skills
  • Exceptional communication and customer service skills
  • Events planning, co-ordination, and management experience

Hours of Work:
