Job Overview

Kokomo Private Island Fiji is seeking an experienced Chef De Cuisine based at Kokomo Private  island, Kadavu.


Duties & Responsibilities

  • Produce creative daily menus of high calibre in collaboration with the Executive Chef focusing on Mediterranean flavours with dock to dish concept and farm to fork
  • Oversee and monitor the quality of plated dishes and presentation of portion-controlled recipes for the assigned outlet
  • Keep current with industry trends and new products available on the market to be an industry leader and at the forefront of culinary creativity
  • Responsible for maintaining a clean and sanitary work environment in accordance with local health authorities and requirements of company policies including property food health and safety documentation, and proper product rotation
  • Conduct weekly chef meetings and monthly kitchen staff meetings to keep staff informed on current property activities, projects & forecasted events
  • Assist in setting team and individual performance standards and executing them in a consistent manner within company guidelines
  • To give clear direction and to monitor and train staff through productive coaching and demonstration of effective leadership while providing constructive feedback
  • Supervision and overall day to day operations responsibility for assigned food outlet and 10-12 employees
  • The ability to meet budgeted food and labour costs through cost-saving and revenue rising strategies
  • Perform other culinary duties as required including but not limited to private dinners, special events, resident barbecues, destination dining, cooking classes etc…

Qualifications & Attributes

  • Motivated and confident self-starter
  • Comprehensive knowledge of cuisine and food presentation is essential
  • Appropriate qualifications in Culinary Arts from an accredited culinary school and five or more years’ relevant experience in a high volume, commercial environment
  • Ability to maintain accurate and consistent records with a basic skill set in using a

computer and its programs

  • Current experience as a Chef de Cuisine in a large 5-star hotel or high end, high volume recognised stand-alone restaurant
  • Sound knowledge of reviewing Kitchen P&L statements including labour and food costs reports
  • Established reputation for creativity and must also be well versed with farm-to-table concept
