The Restaurant and Bar Manager will oversee all operations of the resort’s dining outlets and bars, ensuring exceptional guest service, efficient operations, and adherence to the resort’s standards. This hands-on role requires a dynamic leader with a passion for hospitality, strong organizational skills, and the ability to motivate a multicultural team in a remote, island environment.
· Manage day-to-day restaurant and bar operations, ensuring a consistently high-quality guest experience.
· Recruit, train, and lead a diverse team of servers, bartenders, hosts, and supervisors.
· Create and implement service standards, operating procedures, and staff schedules.
· Collaborate with the Executive Chef and culinary team to align food and beverage offerings with resort branding and guest preferences.
· Monitor inventory, order supplies, and oversee stock control for both restaurant and bar areas.
· Ensure compliance with health, safety, sanitation, and alcohol service regulations.
· Develop and implement promotions, theme nights, and special events to drive revenue.
· Handle guest feedback promptly and professionally, turning challenges into positive experiences.
· Prepare financial reports, control labour and beverage costs, and achieve revenue and profitability targets.
· Maintain strong relationships with guests, vendors, and the local community.
· Support sustainability initiatives, including local sourcing and eco-friendly practices.
· Proven experience (3–5 years) as a Restaurant Manager, Bar Manager, or F&B Manager, preferably at a 4- or 5-star resort or luxury property.
· Strong leadership and team management skills.
· Excellent communication and interpersonal abilities.
· Sound understanding of budgeting, financial reporting, and P&L management.
· Knowledge of international cuisines, cocktails, wines, and spirits.
· Experience working in a remote location or island setting (preferred).
· Ability to work flexible schedules, including evenings, weekends, and holidays.
· Professional certifications
· Proficiency in POS systems and Microsoft Office Suite.
· Passion for creating memorable guest experiences.
· Adaptability to island living and remote work challenges.
· Problem-solver with a proactive attitude.
· Culturally sensitive and able to work with diverse teams.
· Committed to sustainability and responsible tourism practices
This position requires excellent personal presentation and a willingness to live on island with meals and accommodation provided. Previous island experience would be considered an advantage.
