Your day to day

As Pastry Demi Chef you’ll innovate and create all pastry kitchen activities to prepare our delicious pastries - helping create memorable experiences for guests - whenever and wherever they dine. You’ll also ensure quality, kitchen maintenance, and inventory functions kept to our high standards - to make sure your kitchen is always running smoothly. Organizes kitchen operations and prepares and serves a range of pastries, whilst supervising junior members of the Kitchen Brigade and implement new ideas

  • Maintain a lean and orderly cooking station and adhere to health and safety standards.
  • Be fully conversant with the Hotel’s fire, security and emergency procedures and ensure team members are also informed
  • To be aware of the hotel service standards.
  • Ensure OH&S standards and procedures are in place and staff receives the relevant training and refresher training to keep their knowledge up to date on hazards, operating procedures, use and maintenance of equipment and emergency response procedures
  • Ensures that the department is complying with the safety and security rules of the hotel in line with HACCP
  • Ensure compliance with food hygiene and Health and Safety standards
  • Ensure the kitchen is always hygienically clean and safe food handling and preparation practices are followed.
  • Manage the process of all store requisitions, direct purchases, receiving of fresh goods, internal deliveries and food transfers and supervises closely the work of the Outlet chefs in charge.
  • Ensure that all Pastry food items served in the hotel respect IHG standards, in terms of quality, taste, portioning, presentation and variety.
  • Organize daily production of the pastry shop and its display
  • The right ability for maintaining, setting up, producing food and controlling quality of all food items prepared in the pastry department.
  • Be required to plan production and develop seasonal offerings.

Able to develop, designs, or creates new ideas and items for Pastry Kitchen

 

What we need from you

 

  • Trade Diploma in Food & Beverage / Hotel Management with 5 years’ experience in the pastry, culinary, food and beverage, or related professional area from a Tourism and Hospitality Institute
  • HACCP certified
  • Administrative skills are essential
  •  At least one year in a supervisory capacity, or equivalent combination of education and culinary/kitchen operations experience
  • Excellent track record in the culinary field with preference to a mix of quality from Five-star hotel operations
  • Ability to speak local language(s)
  • Good knowledge of different types of pastry, dessert, cake decorating.
  • Possess professional disposition with good communication and interpersonal skills.
  • Flexible - able to work a variety of shifts including weekends, days, afternoons, and evenings.
  • Positive attitude and Good communication skills
