About the Role

We are seeking a highly skilled and dynamic Head Chef to oversee all food production across Nautilus Resort and Muri Beach Resort.

You will lead a team of international chefs, manage kitchen operations, develop innovative menus, and maintain the highest standards of food quality, safety, and hygiene in compliance with Australia and New Zealand FSANZ standards.

This is a hands-on leadership role with a focus on creativity, staff development, and cost management.

Key Responsibilities

  • Design menus for restaurant, in-room dining, and events - with a focus on quality and cost control.
  • Lead kitchen operations, staff scheduling, and training to ensure smooth service and skill development.
  • Oversee food purchasing, portion control, and inventory to meet cost targets and reduce waste.
  • Ensure kitchen safety, sanitation, and hygiene are maintained at all times.
  • Collaborate with management for special events and menu promotions.
  • Monitor financial performance, preparing budgets for food and labor costs.
  • Provide hands-on cooking and supervision, ensuring culinary excellence in all dishes.
  • Maintain relationships with suppliers and ensure quality ingredients are sourced.
  • Develop standard recipes and maintain consistency in food presentation.
  • Promote a safe working environment through staff training and adherence to safety protocols.

 

Supervisory Responsibilities

  • Hire, train, and mentor kitchen staff in collaboration with Human Resources.
  • Uphold a professional, positive team environment, ensuring guest service excellence.
  • Maintain a hands-on approach, leading by example in daily operations.

 

Skills & Qualifications

  • Proven experience as a Head Chef in a high-volume, luxury setting.
  • Strong leadership and team management abilities.
  • Knowledge of FSANZ food safety and sanitation regulations.
  • Ability to create innovative menus, manage budgets, and control costs.
  • Excellent communication skills and the ability to work under pressure.
  • Proficiency in relevant kitchen software and tools.
  • Trade school certification or equivalent culinary training.
