What is the job?
We’re looking for a Chief Steward to join our amazing team at Crowne Plaza Fiji Nadi Bay Resort & Spa.
As the Chief Steward, you become an integral part of the team in maintaining the highest standards of cleanliness, sanitation, and organization within the hotel’s food & beverage operations. This position oversees the stewarding team, ensuring compliance with health and safety regulations, HACCP, and upholding the luxury service standards that our guests expect.
A little taste of your day-to-day:
Every day is different, but you'll mostly:
- Oversee the daily operations of dishwashing, kitchen cleaning, and equipment sanitation, ensuring adherence to all HACCP standards.
- Monitor inventory levels and assist in ordering supplies, equipment, and chemicals necessary for the department.
- Conduct regular inspections of kitchen areas, storage rooms, and equipment to ensure cleanliness and organization.
- Collaborate with the culinary team to coordinate service needs and maintain high standards of cleanliness during events and meal service.
- Develop and implement training programs for new staff, focusing on proper cleaning techniques, safety protocols, and equipment use.
- Assisting in the development and management of departmental budgets, ensuring cost-effectiveness without compromising quality.
- Foster a positive and cooperative work environment, encouraging teamwork and open communication among colleagues.
- Stay informed about industry trends and innovations in stewarding and sanitation practices.
- Ensure that floors are swept and mopped. Keep floors clean and dry, spills are picked up immediately using wet floor signs, dry rags, and dry mops.
- Check the cleanliness of walls, tables, racks, sinks, floor mats, and the disposal area.
- Check the cleanliness of ovens, hoods, filters, drains, hot boxes, steam tables, flat boxes, and ceiling vents, according to schedule or as specified by the Executive Chef or Chef of their respective area of responsibility.
What we need from you:
- Diploma in Hospitality and/or Management.
- Knowledge of dishwashing equipment and chemicals.
- Certification in HACCP would be advantageous.
- Minimum of 2 to 3 years of experience in stewarding leadership roles, preferably in a luxury hotel or resort.
- Strong leadership skills with the ability to motivate and mentor a diverse team.
- Communication skills – All areas of the food & beverage and the colleagues' cafeteria will need to come to you for assistance.
- Flexibility – Work hours may alter depending on Resort Requirements.
- 3–5 years of leadership experience in a maintenance or facilities role.
- A passion for problem-solving and leading by example.
