Ahura Resorts is the management company operating two of Fiji’s most popular and award-winning properties—Malolo Island Resort and Likuliku Lagoon Resort, located in the beautiful Mamanuca Islands.

We are seeking a highly skilled and experienced Group Cost Controller to oversee cost-control operations across both resorts. If you have strong materials-control experience, proficiency in Oracle Simphony for recipe costing and menu engineering, and a commitment to operational excellence, we would like to hear from you.

COST CONTROLLER

As Group Cost Controller, you will be responsible for managing costs, improving profitability and ensuring compliance with the Group’s financial policies and standards. Your expertise in materials control, inventory management, recipe costing and menu engineering will be instrumental in improving efficiency, reducing wastage and maximising returns.

Key Responsibilities

  • Cost Analysis: Regularly analyse operating costs and expenses, identify inefficiencies or overspending, and recommend practical cost-saving measures without compromising quality or guest experience.
  • Inventory Management: Oversee food, beverage and general inventory levels, ensuring adequate stock availability while minimising wastage, spoilage, stock losses and excessive holdings.
  • Menu Engineering and Recipe Costing: Work closely with chefs and Food and Beverage teams to accurately cost recipes based on ingredient costs, portion sizes and production methods. Analyse menu profitability and recommend pricing or menu adjustments to improve margins.
  • Cost and Variance Reporting: Prepare food and beverage cost reports, stock movement reports, variance analyses and other relevant management reports. Provide management with clear insights into cost-saving opportunities and areas requiring corrective action.
  • Stock Control: Coordinate and review regular stocktakes, investigate material variances, and ensure that purchasing, receiving, issuing, transferring and stock-control procedures are consistently followed.
  • Compliance: Ensure compliance with financial regulations, industry standards and the Group’s internal policies, procedures and control requirements.
  • Training and Development: Provide training and guidance to departmental managers and team members on inventory controls, cost-management practices and accountability for departmental expenditure.
  • Performance Monitoring: Establish and monitor relevant key performance indicators and benchmarks. Analyse results and work with departmental managers to implement corrective actions where required.
  • Continuous Improvement: Proactively identify opportunities to improve processes, strengthen internal controls, reduce costs and enhance operational profitability across both resorts.

Qualifications and Experience

  • Bachelor’s degree in Finance, Accounting, Hospitality Management or a related field.
  • Proven experience in a cost-control role within the hospitality industry, preferably involving multiple properties.
  • Strong knowledge of materials control, inventory management, food and beverage costing, and cost analysis.
  • Proficiency in Oracle Simphony for recipe costing and menu engineering is essential.
  • Strong analytical skills, with the ability to interpret financial and operational data and identify trends and variances.
  • Excellent communication and interpersonal skills, with the ability to work effectively across operational and finance teams.
  • High attention to detail, integrity and accountability, together with a proactive approach to problem-solving.

This is an island-based position supporting both Malolo Island Resort and Likuliku Lagoon Resort. The remuneration package and associated benefits will be negotiated commensurate with the qualifications and experience of the successful applicant.
