The Senior Sous Chef will be responsible for staff scheduling, mentoring junior chefs and managing staff members. You will take direction from your senior Chefs on all matters involving Departmental Standards Policy, Health and Safety Policy, due diligence, and staff development / training.

ACCOUNTABILITIES:

The Senior Sous Chef will be responsible for:

• Overall food production in order to achieve highest possible food quality, whilst reducing food cost
• Assisting the Chef de Cuisine to maintain high standard of food quality, hygiene and safety
• Maintaining sufficient stocks to ensure high standards of all food items purchased.
• Identifying the health hazard in the kitchen to be reported to the Chef De Cuisine and/ or Executive Chef, ensuring cleanliness and hygiene levels are met in all kitchen areas.
• Assisting in controlling and minimizing food wastage and ensuring that cost are maintained as per the budget and monitoring staff adherence to proper food handling methods
• Ensuring guest satisfaction by handing guest complaints and special request while adhere to the brand standards.
• Assisting the menu planning and employee training and development.
